The kidney bean is also known as the red bean , although this usage can cause confusion with other red beans.
Red kidney beans (Rajma) are an integral part of the cuisine in northern region of India.
Sometimes kidney beans are used in the red beans and rice of Louisiana Creole cuisine . Other times small red beans are used. Small red beans are noticeably smaller and darker than kidney beans. They have a smoother taste and are preferred for Cajun cuisine.
They have a delicious flavour, a must for chilli con carne.
They make a good salad and will adapt themselves to any recipe for bean soup.
At one time there was a 'scare' about them causing tummy upsets . It was caused, simply and solely, because they were not being cooked properly. Provided they are boiled for at least 10 minutes before soaking, there won't ever be a problem. |
